Dining
A Michelin-starred kitchen, on an island.
We have a full commercial kitchen in the building. Nothing crosses the harbor in a hot box, and nothing is finished in a tent behind the ballroom.
The chef
Edi Frauneder
Michelin-starred chef
Our menus are built by Edi Frauneder, a Michelin-starred chef with a genuinely broad culinary background, working in collaboration with a circle of chef friends rather than in isolation.
What came out of that collaboration is four distinct menus — French, Italian, New American and Japanese — each developed to stand on its own rather than as variations on a single house style. You are not choosing a flavour of the same dinner.
French
Classical technique, unhurried service, sauces that took all day.
Italian
Regional and seasonal, built for the table rather than the plate.
New American
Market-led and direct, leaning on the best of what the season is doing.
Japanese
Precision and restraint, with a raw bar that earns its place.
Service
How dinner reaches the table.
Plated
Coursed and served to the seat. The most formal option and the easiest to run to a tight timeline.
Family style
Platters down the centre of the table. Warmer, louder, and the fastest way to get a room of strangers talking.
Stations
Self-service throughout the room. Keeps guests moving and works particularly well alongside a long cocktail hour.
Passed hors d’oeuvres
Five canapés are included as standard, passed through cocktail hour.

Policies
The questions we are asked most.
Can we bring our own chef?
Yes. Because we only host one party a night, there is a food and beverage minimum that must be met regardless. Outside alcohol service is not permitted, though we are happy to build drinks beyond the standard menu.
Do you offer kosher meals?
Both. Kosher-certified meals for individual guests are included in our pricing model. A completely kosher meal service for the whole event is available at additional cost.
How long is the bar package?
The “Empire Pour” full-bar package runs five hours and is included. Extensions are required for events running longer and start at $10 per person depending on the package.
Inquire
Let’s talk about the menu.
We host one party a night, which means every inquiry gets a real conversation rather than a rate sheet. Send us the date you have in mind and we will tell you plainly whether it works.
