The Carder

Est. 1857 · Governors Island · New York

A harbor address for the day that matters most.

Ten thousand square feet on a 172-acre island in New York Harbor. Lower Manhattan on one side, the Statue of Liberty on the other, and a ferry ride that turns an arrival into part of the day.

The Carder opens Memorial Day weekend 2027. We host one party a night — the building is never shared, and the island quiets down the moment the day visitors board the boat home.

The kitchen

Four menus, one Michelin-starred chef.

Our menus are built by Edi Frauneder, a Michelin-starred chef with a genuinely broad culinary background, working in collaboration with a circle of chef friends rather than in isolation.

What came out of that collaboration is four distinct menus — French, Italian, New American and Japanese — each developed to stand on its own rather than as variations on a single house style. You are not choosing a flavour of the same dinner.

Explore the menus

French

Classical technique, unhurried service, sauces that took all day.

Italian

Regional and seasonal, built for the table rather than the plate.

New American

Market-led and direct, leaning on the best of what the season is doing.

Japanese

Precision and restraint, with a raw bar that earns its place.

Getting here

Everyone arrives by water.

It is the first thing people ask about and the thing they remember afterwards. Three ferry services run to the island, the crossing takes minutes, and a round trip costs less than a coffee.

We host one party a night, which means every inquiry gets a real conversation rather than a rate sheet. Send us the date you have in mind and we will tell you plainly whether it works.
